Ibis Singapore on Bencoolen goes fishing, sustainably

Ibis Singapore on Bencoolen celebrates the inaugural Singapore Sustainable Seafood Festival by announcing that, going forward, all fish on its TASTE restaurant menus will be certified by the Marine Stewardship Council (MSC) or Aquaculture Stewardship Council (ASC).

The certifications guarantee that the fish are sourced sustainably. The move is in line with the hotel’s environmental and social commitments under PLANET 21, Accor’s sustainable development program.

“At ibis Bencoolen, sustainability is a core part of our DNA,” said Pierre-Etienne Demontgrand, General Manager, ibis Singapore on Bencoolen. “One of our key commitments is to eliminate non-sustainable seafood from our menus, and with this event, we are reinforcing this commitment by only sourcing MSC or ASC certified fish.”

During the Sustainable Seafood Festival, guests dining at the hotel’s TASTE restaurant will be spoiled for choice, with a special menu featuring unique creations, such as Salmon with Grapefruit and Hollandaise Sauce, Baked Pacific Cod Loin with Avocado & Mango Salsa or Cilantro-Lime Tilapia. Diners choosing from the hotel’s regular TASTE menu can also rest assured that their fish dishes are certified.

“With this limited time menu, we wanted to show our guests that sustainability can also be delicious,” said Casey Lai, the hotel’s executive chef. “I hope that diners will appreciate the distinct local and international flavors on offer, and also begin to think differently about where their seafood comes from. It is up to all of us to ensure that our fish stocks remain viable – not just for our generation, but for those to come.”

The Singapore Sustainable Seafood Festival, organized by WWF Singapore, runs until 15 June and encourages diners in Singapore to “pick the right catch.” As part of the festival, diners at ibis Singapore on Bencoolen can choose from nine tasty fish dishes, for $$16++, including free-flow LoveEarth sparkling or still water.
